This delicious risotto is full of aromatic flavours with Australian herbs of wild basil and old man saltbush. The Australian plants are very under used but seriously yummy. We like to add them to our food often to give them an authentically Australian flavour. The Wild Basil has that woody yet very delicate sweet flavour, complimented with the salted savoury flavour of Old Man Saltbush it just hits the spot. With zucchini, spinach and capsicum mixed in with the creaminess of coconut milk powder, this dish hits all the senses with its look, taste and smell.
